Wash and clean tableware, pots, pans, and cooking equipment. Maintain a clean and organized work area

Responsibilities

Promote, work, and act in a manner consistent with the mission of Spell Restaurant Group

Wash dishes, glassware, flatware, pots, or pans, using a dishwasher or by hand.

Keep the dishwasher clean and immediately report any functional or mechanical problems to the Manager.

Monitor dishwasher water temperature to ensure sanitary wash cycle.

Maintain kitchen work areas, equipment, or utensils in clean and orderly condition.

Place clean dishes, utensils, or cooking equipment in storage areas.

Maintain adequate levels of clean tableware for the dining room and kitchen.

Maintain adequate levels of dish detergents and cleaning supplies.

Sort and remove the trash, placing it in designated pickup areas.

Sweep or scrub floors.

Stock supplies, such as food or utensils, in serving stations, cupboards, refrigerators, or salad bars.

Clean food preparation and production areas as required.

Receive and store supplies.

Clean garbage cans.

Transfer supplies or equipment between storage and work areas, by hand or using hand trucks.

Handle tableware carefully to prevent breakage and loss.

Attend all scheduled employee meetings and offers suggestions for improvement.

Coordinate with and assist fellow employees to meet guests’ needs and support the operation of the restaurant.

Fill-in for fellow employees where needed to ensure guest service standards and efficient operations.

Qualifications

DUTIES AND RESPONSIBILITIES:
• Assist the Executive Chef/Sous Chef with ordering, receiving and kitchen inventory
• Menu planning (sometimes with a team that includes Hospitality & Events)
• Recipe development, standardization and documentation
• Works collaboratively with Executive Chef/Sous Chef to source ingredients and materials, creates menus to compliment the event and wines
• Must be able to address customers/guest as part of the Wine & Food program as a representative of Joseph Phelps Vineyards, to help explain the occasion and the approach to the Wine & Food pairing as well as to promote the wines and the brand
• Must possess a deep understanding and experience in food and wine pairing
• Assist the Executive Chef/Sous Chef of the execution and presentation of culinary program events
• May occasionally be asked to assist the Phelps Family with private events off-site
• Must work in compliance with all garbage, recycling and composting guidelines
• Understands and demonstrates proper kitchen equipment operation and maintenance
• Performs other duties as assigned by manager
• Assists in the maintenance of a reference file of current recipes
QUALIFICATIONS:
• Minimum of 1-3 years related experience, preferably in a fine dining establishment, pastry shop or winery kitchen
• Demonstrated back-of-house experience with an emphasis on fine dining
• A strong knowledge of wine and wine and food pairing
• Strong verbal communications skills
• Knowledge and background of plating desserts and making Bon Bons and petit fours and experience working with breadmaking
• Excellent presentation skills and ability to speak in front of a large group with enthusiasm and confidence
• Demonstrated ability to work as a team player, multitask and work efficiently in high volume or high-pressure situations
• Extreme attention to detail and accuracy
• Must be highly organized and be able to work with limited supervision
• Versatility, flexibility, and a willingness to work within constantly changing priorities with enthusiasm
• Commitment to excellence and high standards
• Passion, enthusiasm, focus, creativity, and a positive outlook
• Ability to work weekends, evenings and holidays as required
EDUCATION/EXPERIENCE:
• High School diploma or GED, Culinary Certification preferred
• Must have a current and valid Serve Safe Managerial Certification and have HACCP knowledge
